Every great American town needs a spot to grab a bite of our country’s favorite – BBQ! In 2009 Laura and John DeMatteis saw an untapped market in Buffalo, WY. And in August of that year, Up In Smoke, opened its doors to Johnson County.
The DeMatteis’ didn’t just have a vision to open a successful barbecue restaurant however. No, their vision was much bigger. Their shared passion for eating organically played a major role when planning the menu for Up In Smoke. Ninety percent of the menu is organic. This includes drink mixers, sodas, meat, and veggies. It is extremely important to John and Laura to serve only the best. Clean living is a way of life for the busy couple. Laura is a nutrition counselor, acupuncturist, and massage therapist. John works for the organic foods giant, Amy’s Kitchen.
Up In Smoke supports several other small businesses that are helping to grow the economy of Johnson County and all of Wyoming. Raising their own yaks, Laura and John are proud to serve yak direct from farm to table on the Up In Smoke menu. The other slow smoked meats on the menu are also raised locally. The impressive bar is stocked with all local Wyoming microbrews, which are part of the Drink 307 program. Growlers, happy hour specials, food and beer/wine parings and steep discounts are all part of the Drink 307 membership!
Food and fun are both on the menu. Most weekends, Up In Smoke is rocking with live music and special events – promoting local musicians is yet another way the barbecue hotspot keeps the Johnson County community growing.

Between running a restaurant, raising yaks, and of course their full-time jobs, free time can be a bit scarce. When they do find it though, John enjoys fishing, and Laura hits the beloved Bighorn Trails! Calling Buffalo home for over thirteen years, the DeMatteis’ knew they had the perfect place to begin their business venture. And we’re certainly glad they did!
